On a recent trip to Austin, Texas, I decided to try to find a restaurant that serves "clean" food. By "clean" food I mean organically grown vegetables and fruits, non-genetically modified food of any kind, and gluten-free grain products.
The choice I settled on was Casa De Luz in southern Austin. As I was leaving the venue after a delicious meal I noticed a mural painted over the exit door with the the following wording:
When diet is wrong medicine is of no use.
When diet is correct medicine is of no need.

I had never seen/read this proverb before but it captures perfectly my thinking as it has developed over the last year and a half. The proverb also reminded me of a couple of quotations from my current physician, Dr. Ben Edwards of Veritas Medical in Lubbock, Texas:
"Eat what your body needs. Don't eat what your body doesn't need."
and
"Food IS your medicine."
Exactly!
